Get in the Zona

Heaven is a place on earth tomatillo salsa. When I lived near downtown Fort Lauderdale, there was one place I went to when I had the cravings… Zona Fresca. It was only a 2 minute drive from my apartment, but alas, I moved north. Then one beautiful day a few months ago I was driving by a shopping center a mile away from my house, and saw a brand new sign in one of the empty storefronts, “Zona Fresca coming soon”. I almost crashed the car…yes that is sad but true. After months of waiting stalking, it finally opened! Jay and I knew exactly what we wanted since we are lifers. But first, I always have to walk by the glorious salsa bar.

My favorite salsa ever is Zona’s tomatillo salsa. I could down a bowl just by itself.  People stare at me while I fill my many, small cups full of the green stuff. It’s tangy and mild.  Sometimes I add some Cholula to kick up the heat factor.

Hello my love, how I've missed you!

Jay ordered the Charbroiled Chicken Burrito (sans sour cream). I had one baby bite and man was it good. You could taste all the components in just the right amounts. The food here is so fresh and they don’t overdo it with spices.  They also serve fresh chips with every order.  Tip: Get a side of guacamole, it’s the bomb here.

Jay dumped some Pico de Gallo on his chips to make "nachos"

I ordered one Chicken Soft Taco and one Fish Taco (unfortunately not pictured). The chicken taco below can come regular style as pictured with onions and cilantro…or you can get it “gringo style” with cheese, lettuce, and tomato. The fish taco is a beer battered strip of mahi with cabbage for crunch (but too much cabbage on mine) and a zesty, creamy sauce that really complements the fish.

Are those 2 taco shells? Or are you just happy to see me?

Zona is the best “fresh mex” in south Florida IMO. They use fresh ingredients and have the best salsa around. If you live in Broward county and have never been to one of their 3 locations, there might be something wrong with you.

Tired Tacos

After pigging out all weekend I needed to wean myself off all that good stuff (you’ll get to see all the goodies tomorrow). I wasn’t in the mood to cook at all, but an “assembly required” meal was good for me.

I stopped at Publix on the way home and picked up some taco necessities I didn’t have, chicken, limes, tortillas…and my new favorite superfood, Avocado.

I mixed up the avocado with juice of ½ a lime, onion, salt, pepper, and ¼ tomato.

After demolishing the rotisserie chicken, we were ready to make our tacos! Tacos are a great meal when you are feeling slightly very lazy like me.

Then Jay simmered up the bones so we could have some good stock. I’m debating making a soup tonight which may or may not have a cheesy crouton on top.

Now on to my workouts! I feel like I haven’t talked about them in a looooong time. I did pretty good this month. Here is my calendar. The lightning rods are workouts I did and the X’s are workouts I missed or off days. I’ve been pretty consistent the last 6 weeks. I didn’t lose any weight, but I did lose body fat and a few inches. I know I need to eat better (and drink less), but man is that tough when your hubby can basically eat anything, grrr!

What have you been doing workout-wise lately?  I’m always looking for new ideas :)

Rice Fail = Taco Triumph

Happy WIAW! I’ve been eating some good stuff this week so far, and Jay made the best meal of the week. I’m so lucky to have such a good cook as a hubby!

Jay was really set on making a stir fry, so he went to Publix to get the goods. When he came back there was a HUGE rainbow right outside our house. The picture doesn’t do it justice.

I put the brown rice in the rice cooker and Jay prepped and chopped all the goodies. For the chicken marinade he added…
- Soy sauce
- Teriyaki sauce
- Lemon & Lime Juice
- Ginger
- Garlic
- Salt & Pepper
- Cayenne Pepper

Then we cracked open some Guinness to remind us of our Dublin Trip.  Too bad it wasn’t half as good as it is in Ireland.  The froth over there is much thicker, and it tastes nuttier and more full bodied.

Then he chopped the veggies & fresh herbs…
- Basil
- Carrots
- Celery
- Onion

20 minutes later, the rice cooker said 17 minutes . One hour later, the rice cooker still said 17 minutes. My hunger bitch-itis started kicking in. I needed to eat!

We both decided to forget the rice and make tacos. We had just enough tortillas left! I made an impromptu Peanut Sauce with…
- Jif Peanut Butter
- Teriyaki Sauce
- Maple Syrup
I tossed the carrots in the sauce and thought it would make a nice topping for the tacos.

Jay is a pro with a pan!

We put the tacos together and of course….the second I start eating one the rice is finally done, argh! Now we have tons of rice that we need to use.

These Asian-style tacos were really amazing! Jay put together some great flavors & textures. I told him he will need to start making these on a regular basis.

Any ideas for the leftover rice?
