Even though I’m feeding two people when I eat now, I am trying not to eat for two. It’s probably like eating for 1.2? Most of what I eat is pretty much the same as before I got pregnant, but I definitely allow myself more splurges now… especially since one of my splurges can’t be wine anymore. For breakfast I usually make a green smoothie. Lately I’ve been on a kick of PB2, almond milk, frozen banana, kale, and Sunwarrior Vanilla.
Then I go home for lunch. I’m so lucky that work is only 2 miles away from my apartment. I usually make a big salad. This one has lettuce, tomato, chicken and Boathouse Farms honey mustard dressing. I usually get a rotisserie chicken from Costco and it lasts me the whole week. For $4.99, you can’t beat it!
Dinner is always up in the air. It could be anything from butternut squash ravioli to turkey chili (shown below with some plain yogurt and cheddar). On the weekdays, I try to stick to a mostly healthy meal plan. But sometimes the baby needs a slice of pizza.
Then my sweet tooth kicks in! I didn’t really crave sweets that much until the third trimester. Now I mostly want ice cream, cookies, brownies… or a combination. The Ben & Jerry’s sale at Safeway didn’t help. Chubby Hubby is so friggin good!
On the weekends I definitely splurge. One example from last weekend… our attempt to recreate Millionaire’s Bacon. Heat oven to 350. Place bacon over a rack and top with a mix of brown sugar, cayenne pepper, and black pepper. Then bake for about 30 minutes or until bacon is crisp. It turned out great!
