Happy Friday! I had a good day today… worked out, cleaned, did laundry, and made cupcakes! I followed this Carrot Cupcake recipe by Ellie Krieger to the tee. Well, I might have added extra cream cheese. I LOVE my frosting!
Here are the cupcakes straight out of the oven, I was worried I over did them a little.
After impatiently waiting for them to cool, I frosted them and added the walnuts. They were outstanding! Flavorful, moist and with just enough crunch. Plus I’m so glad I made some extra cream cheese frosting. You can never have too much frosting. Let’s see how many I can eat this weekend! Woohoo!
