Happy WIAW, dinner edition! Yesterday morning, I put 4 chicken breasts in the slow cooker with some chicken stock, bbq sauce, and some Frank’s Red Hot. I set the Crockpot for 8 hours on low and went off to work…

Jay came home from work and I started to ramble off some stuff I could make with the chicken… sandwiches, paninis, tacos, enchiladas? He stopped me as soon as I said enchiladas.
Chicken Enchiladas
total time needed: 50 minutes
servings: 4
• 2 cups shredded cooked chicken
• ½ onion, thinly sliced
• 1 tablespoon olive oil
• 1 can enchilada sauce
• Salt to taste
• 8 tortillas (I used 3 whole wheat and 5 flour)
• 10 (8 inch) flour tortillas, warmed
• 1 cup shredded cheddar or Mexican blend
• ½ tomato, chopped
1. Preheat oven to 375 degrees.
2. Add olive oil to large skillet, sauté onions until transparent. Add chicken to onions, then add ¼ cup of enchilada sauce and salt. Stir until well combined.
3. In a 13×9 baking dish, pour a little of the enchilada sauce on the bottom, just enough to lightly coat.
4. To assemble: spoon about 1/3 cup of the onion-chicken mix off center on each tortilla; roll up. Place seam side down in the baking dish.
5. When all are assembled, ppur remaining enchilada sauce on top of enchiladas and then sprinkle on the cheese and tomatoes.
6. Bake at 375 for 20-25 minutes. Let stand for 5 minutes before serving. Top with some fresh guacamole, especially Nat’s Famous Guacamole!
The enchiladas were amazing! Jay must have said “Oh yeah” about 20 times. The filling was savory and had just a hint of sweetness. The guacamole added a great cool kick and a nice crunch from the raw onions in it. I will be making this again and again and again.

Yum! I totally want that! I like to make bbq or chicken salad sandwiches. I guess I’m just a sammich kinda girl.
Mmmm slow cooked chicken! Simply the best. I would use leftovers to make chicken salad, or maybe use it as a pizza topping!

I love enchiladas! I don’t eat a lot of chicken, so I don’t usually have leftovers, but cold chicken is good on salads
