I love Seinfeld! hehe… Anyway, last week I made this delectable creation and am finally getting around to the recipe. It was Jay’s wonderful idea to put the bones from a rotisserie chicken in a pot to make some stock…and then my idea to load it with cheese. If you guys didn’t know already, cheese is my favorite food group.
Jay made a great stock by covering the picked over rotisserie bones with water and let it simmer for a couple hours. Then he removed the bones and added carrots, celery, onion, salt, pepper and garlic.
I had a package of mini-gnocchi (BOGO at Publix) and tossed half a package into 4 cups of soup.
Luckily the bread I had was a perfect fit for my bowls. It was waiting patiently for the soup to be ready.
Here is the recipe (tweaked for two people)…
Cheesy Gnocchi Chicken Soup
2 ½ cups of Chicken Soup (no noodles, lots of veggies)
2/3 cup Gnocchi
1 cup shredded mozzarella cheese
2 tablespoons grated Parmesan Cheese
2 thin slices of bread
1. Cook Gnocchi according to package directions and set aside
2. After Gnocchi is done, warm up the soup. Then add Gnocchi and let simmer for 10 minutes
3. Set Oven to Broil
4. While Soup is simmering cut the bread to fit soup bowls (if necessary) and toast until crispy
5. Ladel Soup into 2 bowls and top with the crouton. Quickly add ½ cup mozzarella and then 1 tbsp parmesan to each soup.
6. Broil until golden brown, about 3 -5 minutes.
The soup was filling and delicious! 1 bowl is all that I needed for dinner. I can’t wait to experiment with more “French onion” style soups. All soup tastes better with a cheesy crouton on top! Look at all this cheesy goodness!

Some prissy ppl get mad when you say dairy is a food group…but I agree with you– cheese should be a separate food group!!! I adore cheese, esp all toasted and golden like that!
