It’s WIAW time! I made a pretty freakin good dinner last night. I was researching some slow cooker recipes and saw this Chicken & Dumplings recipe from Allrecipes. After some tweaking on my part, here is what I came up with…


Chicken ‘n Dumplings Florentine• 2 skinless, boneless chicken breast halves
• 1 tablespoon butter
• 1 (10.75 ounce) can condensed cream of chicken soup
• 1/2 onion, finely diced
• ½ tsp garlic powder
• ¼ tsp each of Salt, Pepper, Ground Sage
• Chicken Stock (about 3 cups or so)
• 1 small bag of spinach
• 1 (10 ounce) package refrigerated biscuit dough (leave out 2 biscuits)
• Optional: Parmesan Cheese
1. Place the chicken, butter, soup, spices, and onion in a slow cooker, and fill with enough chicken stock to cover. Then place spinach on top.
2. Cover, and cook for 8 hours on low.
3. When it is done, remove chicken, shred, then place back in slow cooker.
4. Tear up the biscuit dough and place in the slow cooker. Let cook for 60 minutes on high.
5. Then it’s ready to serve! (Makes 3 – 4 servings) Sprinkle with some parm if desired.
6. Optional – save the 2 extra biscuits for dessert! My dessert recipe is coming tomorrow


The Chicken and Dumplings recipe came out SO well! Jay devoured tons of it. It’s amazing how those biscuits taste like real homemade dumplings. It was the ultimate comfort food. This would also be great with more fresh veggies like carrots, celery, corn…I will try that out next time.

Oh wow – major yum. I’ve made biscuits from a can as, well, biscuits. And I’ve used can biscuits to make a really awesome thai calzone thing. Now, I think the can and I have more bonding in our future.
I adore chicken and dumplings! I’ve settled for chicken and noodles when I’ve made it recently, I never even thought to use the pre-made dough! That is such a great time saving idea!

Love your blog title! And this recipe – love the idea of using the prepackaged rolls to make prep even more quick! Definitely on my comfort food list (along with shephard’s pie or anything w/ mashed potatoes, including liver and onions, LOL, yes!) If I have to cook for myself, & I’m too down to cook, I’d have to say my favorite comfort food is 2 eggs over easy w/ cottage cheese and toast. There must be someone out there who shares that comfort food w/ me!
