Guacamole Monday

Dinner last night was contingent upon one thing…good Avocados! For some reason they have been really hit or miss lately. Luckily, Publix had some good ones for the taking. I can finally make Guacamole!

My tasty ingredients

Nat’s Guacamole

1 Avocado
2 tbsp tomato, finely diced
2 tbsp onion, finely diced
Juice of ½ a lime
A couple dashes garlic powder
Salt & Pepper to taste

Slice the avocado lengthwise and remove the pit. Then score the avocado in a square pattern (see picture below) and squeeze out into a bowl. Toss in the other ingredients then mash it all up with a fork. If you want a creamier guacamole, mash the avocado before you put in all the ingredients. Serves 2 – 4 people.

After I made the guac I set up a taco bar for dinner. We had tortillas, white cheddar, rotisserie chicken, salsa, and Frank’s Red Hot. I used all of it except the Red Hot.

I also wanted to show you guys my IKEA stash! I got a brand new desk with adjustable legs which I thought was pretty cool. The chair was in the clearance aisle, woohoo! (Please Ignore the ghetto looking stereo, hehe)

I guess I need more cookbooks! hehe

    I dont make guac at home since I live alone and have no self control whatsoever when it comes to guacamole. But if someone else makes it and wants me to taste, I am all about it!

    I never liked avocado until last year. My taste buds must’ve changed or something. Now I’m obsessed with it!

    • I was SO close to getting the white one.

      I used to hate avocados too until after college. I can’t get enough now!

  10. I LOVE guacamole! It’s definitely my favorite! I usually make mine with some red onion, diced tomatoes, sprinkle of salt and lime juice. So good! :)

  11. I LOVE guac!! :) I saw a video the other day and the guy buys ripe avocados smushes them up with lime juice and then freezes them in ziplock bags, so he always has fresh guac within reach! -Brilliant!

    I love IKEA too, although I haven’t been there in years. I dont’ even know what they have these days, but I was always a fan of their artwork!

  12. That guacamole is making my mouth water! I have never made my own but Ive had some friends’ homemade gauc and OMG it’s delish!!!! I know I’d end up eating the entire thing if I made some!!
