Squash Me Up

For my WIAW post, I wanted to do a little experimenting by making something I’ve never tried before. Butternut Squash is something I love, but have never attempted to cook myself. That along with some grilled chicken was exactly the dinner I needed.

I knew the squash would take a while, so I started making it as soon as I got home for work. The knife took a little maneuvering, but it wasn’t too bad.

I gutted that bad boy and it was almost ready for the oven!

Sprinkle of the goodness and we are good to go.

While that was roasting, I marinated some chicken in bbq sauce, red wine vinegar, maple syrup and cayenne pepper. When Jay (aka grillmaster) got home from work, he put those babies on the grill while we enjoyed the sunset.

As soon as the chicken was done, my squash was ready for some mashing.

Mashed Butternut Squash

  • 1 butternut squash
  • 1 tbsp EVOO
  • Salt & Pepper to taste
  • A few dashes Cinnamon
  • 2 tbsp butter
  • Parmesan Cheese (optional)
  1. Preheat Oven to 400
  2. Cut squash in half lengthwise, then remove the seeds.
  3. Place squash cut side up on cookie sheet, then sprinkle EVOO, Salt, Pepper, & Cinnamon.
  4. Bake at 400 for approximately 40 minutes.
  5. Let cool for about 15 minutes before handling (it really retains it’s heat!)
  6. Heat medium sized pot to medium and add butter, then Scoop out squash and to the pot. Mash with a potato masher.
  7. Serve up the goodness (makes about 2 large servings), and then sprinkle with parmesan cheese is desired.

The squash was a hit! The Parmesan added a delicious contrast to the sweet squash. I kept thinking how good it would be as a ravioli filling. The chicken was delicious too! I love when improve marinades work out so well.

  9. Mmmmm, I love mashed butternut squash! It’s my favorite way to make it. The best thing I had today was an iced mocha, technically not a meal but the best thing I put in my mouth!

My husband HATES it, though so I always have to make him something different, which is annoying, but worth it so I can eat it. :) The best thing I ate today was a bowl of mint chocolate protein ice cream – it was the ugliest color from the spinach and the chocolate protein powder, but it tasted perfect!
