Pannini for Me

Last night Jay was helping out his parents, so I was solo for dinner. My empty fridge was full of underwhelming possibilities. But I had two good things going for me…cheese & bread. Then I remembered my leftover chicken piccatta. The Three Cheese Chicken Pannini is born!

I took two slices of bread and put on some cheddar jack. Then to one side I added some Feta, and to the other side I added my all time favorite condiment…Frank’s Red Hot.

Then it was time for the chicken…man was it tiny! But I’m sure it was a “normal” serving size, bleh.

I put some olive oil into a pan, and while I was eating I nibbled on some Feta. I just can’t help myself around cheese!

When the pan was hot, I put both sides down on the pan to let the cheese melt before I attempted to flip it. I miracusoly flipped without the shredded cheese going everywhere, then I smashed it with my awesome $10 pannini press. I got it at HomeGoods a couple years ago. It doesn’t leave the cool griddle marks, but it smooshes the bread perfectly to make an amazing crispy crust!

It was done only a few minutes later, and I could smell a hint of hot sauce…that’s when you know it’s perfectly spicy.

A girl can’t eat a pannini without any sides, so I busted out the Wholly Guacamole I bought (I tried to make fresh but the avocados at Publix sucked a$$). Then I tossed a few tortilla chips on my plate. I couldn’t believe the guac was actually really good! I would definitely buy it again.

While I was watching The Office reruns on TBS, I got a major chocolate craving. I grabbed my go to craving buster… a Dove dark chocolate promise. It hit the spot. A couple minutes later Jay came home and burped in my face…not cool! The wonderful chocolate taste I had was all gone.

"Be a little naughty with your nice" I like it!!

  1. I felt the same way about Wholly Guacamole and it’s great, right? This post contains three of my favorite foods: guac, hot sauce, and dove dark chocolate. YUM!

  2. Yum! I love panini sandwiches – and I especially love Feta. I’m the same way – I always snack on it when I’m cooking with it. :) Wholly guac is pretty decent – I prefer homemade, but for store bought it’s actually pretty tasty. I usually always have some in the fridge for a quick fix :)

  3. That sandwich looks great! I really want to get a panini maker. That is something to add to my registry! :) Dove chocolate is the best!
