Of course, the one day I can sleep in (because I have to work late tonight, booo), I woke up before my alarm went off. I threw one of my jackets into my suitcase and thought that was enough, hehe. I’m going to finish all my packing tomorrow morning before we head to the airport.

Ugh, still have way more to pack. This is about 1/3 of what I'm bringing.
I drank some coffee and started to organize my blog posts for the week. By popular demand….I will be doing restaurant reviews while I’m gone. Some from my past trip to New Orleans, and some from Florida. Plus I got 2 great food fact Fridays in the works! I’ll be back to regular posting on May 9th!
After I sipped on some coffee I was ready to make some breakfast. I had some frozen bananas in the freezer, so banana soft serve it is! I’ve seen this on tons of blogs and have been waiting to make this for myself. I was finally in the mood for it…after trying it I think I will always be in the mood for it now. It’s so easy to make and is SO creamy!
Banana Soft Serve for 1
1 ½ frozen bananas (peel & cut bananas before freezing)
- Place bananas in food processor
- I put the processor on high and let it process away, I didn’t have any issues. Pulse & scrape if necessary
- Process until it looks like ice cream!
The frozen bananas are ready!
Then it starts getting crumby
Now it's creamy goodness!
To complete my deliciousness I made a parfait. I layered the soft serve with vanilla granola, then topped it off with a heaping spoonful of Nutella. That made the parfait a-freakin-mazing! I gobbled it all up and wished there was more!
Ohhhh yes!
That took less than 5 minutes

Isn’t it funny how dogs just KNOW that something’s up when their people start packing? My husband was packing the truck to move a few days ago, and the dog kept jumping in the truck. It would have been funny…if it weren’t so sad.

That parfait looks SO good! I have been dying to try banana soft serve! The only thing is that I don’t have a blender or a food processor. Once I get one of those things, I am definitely going to try making this! So yummy!
