Crust My Chicken

Last night, I was craving something healthy for dinner that seemed decadent. So I came up with the idea to do a Mexican style “Chicken Parmesan”.  Jay approved so off I went to devise my meal…

The chicken was a huge success!! It was juicy and perfectly spiced. We ate this with a nice side salad. It was a fantastic meal.

Blue Tortilla Crusted Chicken

  • 2 Boneless, Skinless Chicken Breasts
  • 15 baked tortilla chips (I used Garden of Eatin Baked Blue Chips, my new fav!)
  • dash of salt
  • few dashes garlic powder
  • few dashes pepper
  • 1/3 cup salsa
  • 1/4 cup shredded reduced fat cheddar cheese (I used Kraft 2% Cheddar)
  • 1 tbsp olive oil
  1. Preheat oven to 375.
  2. In a ziploc bag (or food processor), crush up tortilla chips, then add the spices and mix. Dump contents onto plate.
  3. Lightly rub each side of the chicken breast with the olive oil, then coat both sides with the tortilla chips.
  4. Spray baking sheet with non-stick cooking spray.
  5. Place chicken on baking sheet and bake at 375 for about 15 minutes (more if chicken is very thick).
  6. Remove from oven, then evenly spread the salsa over each chicken breast, then the cheese. Put back in the 375 oven for 3 minutes (until cheese is melted).
  7. Serve and enjoy!

  7. I love the idea of matching food with workouts. Once in a while I get carried away with managing my meals, managing my exercise and kind of lose track of the love of it all. Have a good workout. Enjoy a great meal knowing I’ve already paid for it.
    The blue tortilla chips really give the dish a different look! It’s like it violates a rule in my head that says “don’t eat blue things!!” I can’t wait to try it. Thanks!

  8. Hahaha! When I first read the recipe I thought it said “15 BAGS tortilla chips”… 15 chips makes way more sense. ;) Looks yummy!
