What I’ve Been Eating Today

I’m so glad I’m FINALLY Participating in Peas & Crayons What I Ate Wednesday! Woohoo! For the first time, I remembered to take pictures of everything that I ate. It’s an adventure trying to take pictures at work, let me tell ya.

I started out with a delicious breakfast. I read Gabriela’s blog, Une Vie Saine, and was drooling over her pudding idea! I knew I wanted to recreate it but was missing Chia seeds. I still can’t find those…any suggestions? I’m going to be experimenting with this recipe for sure, probably add more PB2.

One big happy pudding family!

Nutty Banana Chocolate Breakfast Pudding
- 3/4 cup unsweetened vanilla almond milk
- 1 tbsp Nuttzo Nut Butter
- 1 tbsp PB2
- 1 tbsp Hershey’s special dark cocoa powder
- 1/2 large banana, mashed
- sweetener, to taste (I added 1 heaping tsp of sugar, which did the trick)

Whisk all of these together (I may even try blending), and then put in your favorite cup to meld overnight in the fridge. In the morning, you will have a delicious breakfast pudding!

It was definitely mousse-like towards the top, and got a little soupy towards the bottom. But I was gobbling all that goodness up! I tasted the banana the most, then cocoa, then nut butter. What a tasty and healthy breakfast!

Before I went to The Warehouse, I had my classic midday snack, PB2 and Jelly on Ezekiel. The Jelly d’jour was Smuckers Simply Fruit Black Cherry.

You know what time it is!

I was super excited about my lunch today. Since I was uber-lazy on Sunday and didn’t prepare anything for my work meals, I went to Publix Greenwise yesterday to stock up on work goodies. From their droolworthy prepared foods section I bought some Grilled Chicken, Edamame Salad, and Tabouleh and decided to mix it all up. The two salads together had all this goodness….corn, tomatoes, parsley, red onions, bulgur wheat, chickpeas, edamame, golden raisins, and carrots. It was SO good to have a little different flavor in each bite.

I already want more!

Tonight I’m experimenting with Socca Pizza! Can’t wait to tell you about it tomorrow :)

  6. For breakfast, I had a piece of toast with a sunny side up egg and salsa verde drizzled on top. Random and delicious!

  7. Anything with chocolate and nut butter is a winner in my book!! I buy my chia seeds online, http://nuttyguys.com/ is around 8 dollars for a pound. If you do groupon, they sometimes I have deals!

  8. Did your breakfast keep you full?? I’m worried it wouldn’t keep me full for very long! “What I ate Wednesday” is really fun…I may need to participate next week :)

  9. Great Harvest bread was the tastiest thing I ate today. God my favorite bread ever.

    I think you can find chia seeds online! I think they are overrated though. Just another blog fad. :-)
