I did my run! woohoo! I felt good even though at a couple points I was hacking up a lung slightly. I ran/walked 2.8 miles at an 11:00 pace. Towards the middle I took a long walk break since I started to get a little dizzy. I think I need to go more carb heavy on my afternoon snack?
Now it was time for dinner. Who doesn’t loved stuffed chicken? I’ve had chicken cordon blue many times…but making it at home has always scared me. I can always picture the chicken falling apart, and all the goodies leaking in my oven. But I had chicken to use and prosciutto that was soon to expire, and I thought the prosciutto would be a good “tape” to keep the seams of the chicken together.
I had a decent amount of salty ingredients so I wanted something sweet to balance it out, that’s how I came up with the honey glaze. It worked out well! I thought It might taste funny with the olives, but the combo of all the flavors tasted great. I will be keeping this in my repertoire for sure (and experimenting with more stuffed chicken!).
Ricotta Stuffed Chicken with Prosciutto and Honey Dijon Glaze
Ingredients:
3 chicken breasts
3 slices prosciutto
1/3 cup ricotta cheese
1/4 cup grated parmesan cheese
1/3 cup olives
1/2 tsp lemon juice
Glaze:
1 tbsp honey
1/2 tbsp mayonnaise
1/2 tbsp dijon mustard
- Preheat oven to 375 and spray baking sheet with non-stick spray.
- For filling, finely chop up olives, then combine with the rest of the filling ingredients.
- Pound out the chicken breasts until they are about 1/3 of an inch thick.
- Evenly distribute the filling among the chicken breasts.
- Fold the chicken up and wrap with prosciutto so the creases are covered by it.
- Place chicken on baking sheet and bake at 375 for 25 minutes.
- While chicken is baking, combine the honey, mayo, and dijon and set aside.
- Remove the chicken from the oven, then spoon glaze over the chicken.
- Put chicken back in the oven for 5 more minutes at 375. Then it’s ready to serve!
We ate this with a small salad and it was a great meal! Then I watched Modern Family & Top Chef. Two of my fav shows. Any other Top Chef fans? I think Richard should win, how about you?

LOVE Modern Family! It is one of my very favorite shows of all time. I’m also a big fan of Top Chef but I can’t watch it now that we’re without cable!
I’ve never seen either of those shows! I love to eat stuffed chicken, but not so much to cook it. I absolutely abhor pounding chicken. Can I get the butcher to do that for me?
Nicely done!!! Stuffed chicken was one of my favorite things to make when I ate meat. I haven’t ventured into stuffed tofu land yet but maybe someday
I get dizzy if I have to workout in the afternoons….I think I may need a more substantial snack too.

oooo yummers. Great run too! It always feels good to get in a good workout. I sssoo have to get caught up on Top Chef! eeck! I have the last 3 episodes on my dvr, so i plan to have a marathon this weekend. Cant wait!
I’m at my friends and we are keeping things on the cheap tonight so I suggested stuffed chicken. Now I just have to figure out what to stuff it with. Yours looks great I love the combo of bacon + honey dijon.

I’ve never made stuffed chicken, but this really inspired me to try it! I’m thinking about a dairy free version … Maybe squasu puree would work? With a little tahini or almond butter? Deedum deeduum, now the ideas are coming!
