At the Socca Cabana

I did it! I finally made socca. After hungrily staring at socca blog posts for about a month, my mind finally clicked….must find garbanzo flour now. When I was strolling around in Publix Greenwise I actually remembered to browse the “alternative” flour aisle and I couldn’t believe it was there. I thought it might just be a Trader Joe’s fantasy I was having. But it was real life! Oh yeah.

Katie from Nourishing Fourishing helped me out when I screamed out for some socca ideas from twitter. Her Socca Pizza looked perfect! I told Jay I was going to make it for dinner, and he only seemed slightly scared, which I took as a very good sign. Here’s how I made the pizza, but you can do so many different things! I’m psyched to experiment more with this recipe.

Socca Pizza
(makes 2 personal size)

  • 1 ¼ cups Garbanzo Flour
  • 1 cup water
  • ½ tsp dried oregano
  • ¼ tsp garlic salt
  • A few grinds of black pepper
  • 2 tbsp olive oil (1 for each pizza)
  • Toppings: add your fav!
  1. Combine Garbanzo flour and spices in medium size bowl.
  2. Gradually add the water and whisk until there are no lumps and everything is well combined. (Should resemble pancake batter)
  3. Heat skillet (I used Cast Iron) to medium and add 1 tbsp of oil.
  4. Add half the batter, and let cook for a few minutes (until edges are dry), then flip and cook other side.
  5. When finished, transfer to cookie sheet and do same process with rest of the batter.
  6. Preheat broiler. (We set ours to 475)
  7. When all crusts are ready, top with your favorite toppings.
  8. Place under broiler for a few minutes, make sure to watch like a hawk!

The pizza was amazing! The crust had great flavor, more hearty than regular pizza crust. My favorite part was the crispy edges. Even Jay loved it, and he his picky about his pie. Jay’s had all pepperoni, mine had half tomatoes/half spinach and pepperoni.  We spent the dinner brainstorming about all the other things we can do with it.

  9. Okay I am doing it!!! I couldn’t find chickpea flour but I found dried chickpeas and directions on how to make the flour myself! I am so excited to make socca this weekend. This pizza looks super good :-)

  13. It looks so delectable, and economical too. Most of the personal sized pizzas at the grocer costs almost as much as a full size. And I prefer handmade anyways.
