Lovely Lasagna

My goal is to eat healthy, especially during the week. I love to make better-for-you recipes from typically “fattening” foods.  For this recipe I used all light cheeses, a lower calorie tomato sauce, and whole wheat noodles. I also put less noodles than are usually used, so it wasn’t too heavy on carbs. It was sooooo good! Plus, you can freeze this for up to a month and keep it handy when you don’t feel like cooking.

Chicken Sausage and Artichoke Lasagna

  • 6 whole wheat lasagna noodles
  • 1 24 oz jar of marinara sauce
  • 1 12 oz package of pre-cooked Chicken Sausage, coarsely chopped
  • 1/2 cup chicken stock
  • 1 tsp EVOO
  • 1 tbsp minced garlic
  • 1 14 oz can of artichoke hearts, drained
  • 3/4 cup ricotta cheese (part skim)
  • 1/3 cup light cream cheese
  • 1/3 cup light sour cream
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp lemon juice
  • 1 cup mozzarella cheese (part skim)
  • salt & pepper to taste

Preheat the oven to 375. Prepare the lasagna noodles as directed on box. Heat a separate pot to medium, add the olive oil, then saute garlic. After 1 minute, add the sausage, sauce and chicken stock. Bring to a simmer. Let simmer for 10-15 minutes. In the meantime, in a medium size bowl, combine the artichokes, parmesan, cream cheese, ricotta, sour cream, lemon juice, salt and pepper then set aside.

To assemble, spoon 1/3 of the tomato sauce on the bottom of a 9×13 dish. Place 3 of the lasagna noodles on top. On top of the noodles, spread 1/2 of the ricotta mixture. Then, sprinkle 1/2 of the mozzarella cheese and another 1/3 of the tomato sauce. Next comes another layer of 3 lasagna noodles, the remaining half of the ricotta mixture, and the last 1/3 of the tomato sauce. Then sprinkle the rest of the mozzarella cheese. Bake in the oven at 375 for 30 minutes. Let sit for about 10 minutes to set, then serve and enjoy! (Makes 6 large servings)

  2. This is the second recipe I’ve seen this wk for lasagna with chicken and artichoke and I’m the diggin the idea! I usually put Morningstar Veggie Crumbles, onions, mushrooms and spinach in mine but like to mix it up. I love lasagna and will usuaully make a pan then enjoy half that wk and freeze the other half for a quick meal later on!

  3. This looks yummy! I really like veggie lasagna or a Mexican style lasagna. Basically I like anything that has protein, complex carbs, and veggies all combined into one dish :)

  4. I’m pretty boring about my lasagna. I pretty much just do cheese and sometimes go nuts and add spinach. My husband would like if I added some sort of meat or sausage, but I never seem to have any on hand when I make it!

  5. Mmmm! This lasagna looks delicious! I really like spinach and ground turkey or beef in my lasagna.

  6. I am so plain when it comes to lasagna. I am big on the cheese though – add in ricotta, parmesan, romano you name it I love it!
