We don’t go too crazy on Valentine’s Day, our big celebration days are August 23rd (the day we met) and October 30th (our anniversary). But I wanted to make a nice meal for us to devour enjoy.
After I took the dog for a walk and poured myself a small glass of wine, Jay walked in from work with a huge envelope… at first I thought it could be an actual record (secretly hoping it was Michael Jackson’s Thriller). I opened it and there was a HUGE card. It was a little heavy, so I thought there would be some music playing… and I was right! It was a Spanish card with some mariachi-type music playing. It was awesome. Leave it up to Jay to find the most random card in the store.
For dinner I tweaked this Pot Roast recipe from Not Your Mother’s Slow Cooker Cookbook. It’s a huge cookbook with lots of variations of classic and not so classic slow cooker dishes. I highly recommend it! The pot roast only took about 15 minutes of prep work, sooooo easy.
Easy Breezy Pot Roast
• 3 pounds chuck roast (I used bottom round)
• 1 tsp salt
• ¼ tsp pepper
• ¼ tsp paprika
• 2 cloves of garlic, finely chopped
• ¾ cup beef stock
• ¼ cup red wine
• 3 carrots, chopped
• 3 parsnips, chopped
• 1 onion, chopped
• 3 potatoes, peeled and cubed (I used 6 smaller red potatoes)
• 1 stalk celery, chopped
1. Take all vegetables (except potatoes) and place them on the bottom of the slow cooker
2. On top of the veggies, place the potatoes and garlic.
3. Trim excess fat off the roast.
4. Mix paprika, salt, and pepper and rub onto the roast.
5. Place roast on top of veggies.
6. Pour wine & stock on top.
7. Cover and cook on low setting for 8 to 10 hours.
We also were lucky enough to eat some Lobster Mac & Cheese that our friend made for us, YUM! It had an awesome panko & parmesan topping.
We have a lot of leftover pot roast! Any ideas on how to use it?? I was thinking tacos…

Ooh I just bought that cookbook for my mom for Christmas (which is ironic because of the name, haha). This looks yummy!
I think all leftovers can be made into tacos! Definitely my favorite thing…or quesadillas. I am loving that lobster macaroni and cheese. Lew and I had lobster mac and cheese after the first day I learned to snowboard and it definitely made all the pain I was feeling a lot better!
We celebrate our anniversary and “dating anniversary” instead of Valentine’s day too!
Looks like a delicious Valentine’s Dinner. I totally LOLed when I saw that card…partially because it’s so random and partially because I’m supposed to be doing Spanish homework right now…ironic!
What a great V-day dinner! Looks so good! I’m with you on the tacos! I think the leftover pot roast would taste great in tacos or enchiladas! Yum!
Can you freeze leftover pot roast? There is always so much left, we end up throwing some out.

Mmmmmmm, this looks good! A pot roast is one of the dishes I haven’t dared to make yet but definitely want to! At least, I’ve already made gulash to warm up for the pot roast.
