Oh yes these are for realz people!!! It truly only has three ingredients….you don’t add any eggs, water, nothin. I got this kick a$$ recipe from Jen at The Warehouse. It’s so easy and tastes so good, you would never know they aren’t junk food.
Chocolate Chip Pumpkin Muffins
- 1 package Devil’s Food Cake Mix
- 1 can Pumpkin
- ½ bag chocolate chips (the Ghiardelli 60% are amazing)
- Preheat oven to 400.
- Line muffin tin with paper cups (makes about 18 muffins).
- Mix together the Pumpkin and Cake Mix (batter is very thick)
- When everything is completely incorporated, stir in the chocolate chips.
- Spoon in mix so each cup is about ¾ full
- Bake at 400 for 15 – 20 minutes
Some people want to call these cupcakes, but I think cupcakes need to have frosting. I thought about making frosting for these… and about adding some peanut butter chips. All of the above would be great! But these muffins really do stand on their own. You can’t even taste the pumpkin…it’s all about the chocolate.

A can of pumpkin and cake mix works with any flavor – I’ve tried a bunch! Tip: It really sparkles with Spice Cake

alright little miss thang… I’ve been eying cans of libby’s pumpkin in stores forever now.. but never committed to it b/c what on earth would I make with pumpkin? I’ve only ever tried pumpkin in a pie and it was disgusting and I never tried the veggie again. Traumatized.

Yum! You can also make cookies with cake mix…one box of mix, 1/3 cup of oil, 1 egg, and whatever “extras” you want to add. My favourite was spice cake and raisins.

I love making these! Then again, I normally leave out the chocolate chips so they’re even SIMPLER! Haha. Sometimes I just throw it in a brownie pan, and call it fudge. (Yes, it’s like the laziest fudge ever, hehe)
I bet coconut would be kind of yummy! Maybe nuts?
