I love anything “Buffalo” style… chicken, shrimp, burgers. The list goes on and on. I decided to cook up some of my Hodgson Mill Whole Wheat Penne with some marinara, when I saw a recipe on the side of the box for Buffalo Chicken Pasta. I thought it was a great idea! It had a long list of ingredients so I decided to make it my own way. Here is what I came up with. This makes 3 servings.

Protein: 32g

Buffalo Chicken Pasta Salad
- 1/2 a box whole wheat penne
- 2 chicken breasts (cooked and diced, I bake mine with salt & pepper)
- 2 1/2 tbsp light mayo
- 3 or 4 tbsp Buffalo wing sauce ( I LOVE Frank’s)
- 2 tbsp Red Wine Vinegar
- 1 cup Birds Eye Pepper Stir Fry (in the freezer section…or use your fav veggies)
- 1/4 cup Blue Cheese Crumbles
Cook pasta according to directions. When pasta has 2 minutes left, add the frozen peppers to allow them to cook with the pasta. When the pasta/peppers have finished cooking, drain, set aside and allow to cool. In a medium sized bowl, combine mayo, wing sauce, red wine vinegar and blue cheese crumbles. Toss with the peppers, pasta, and chicken. You can eat it as is, but I think it’s best to pop it in the fridge for an hour or 2.

Oh girl, I am with you! I love buffalo style anything!! I didn’t grow up this way so I missed out on 20 years of joy! It was just under 3 years ago that my husband (then fiance) introduced me to buffalo chicken wings… um, yes… delicious. Anyway, this recipe looks so yum! Thanks for sharing!
My husband and I love Buffalo chicken just like you, and this seems like a great healthy alternative! Agreed about putting it in the fridge–that would make for a tasty summer salad.
