Chocolate Chip Cookies

Sorry about the missing post yesterday! My camera was having some major issues. I think it’s fixed for now. Last night I used my horrible camera on my phone. I cooked up some yummy Cookies and Shepherd’s Pie. In my hunger, I didn’t take pictures of the finished Shepherd’s Pie…but tonight I will for sure. Stay tuned :)

I know this isn’t healthy….but a good tip is to make a batch and freeze them individually. I took some to work and now have 4 left at home. My plan is to have one cookie every other day. It’s a great treat!


Small Batch Chocolate Chip Cookies
1 cup flour
1/4 tsp baking soda
1/4 tsp salt
7 tbsp butter, melted
1/2 cup brown sugar
1/4 cup sugar
1/2 tbsp vanilla
1 egg
1 cup chocolate chips

Preheat oven to 325. With electric mixer, cream butter and sugars in large bowl. After mixture has come together, add egg and vanilla and beat until smooth. In separate bowl, sift flour, baking soda, and salt. Slowly add flour to the butter mixture and beat on low until combined. Then stir in chocolate chips. Drop cookies onto baking sheet and bake for 15 – 17 minutes. Makes about 1 dozen cookies.
