Turkey Fiesta Lettuce Wraps

I was inspired when I went to Publix and saw a beautiful head of lettuce. I thought it would make for some delicious lettuce wraps, and I was right! So I picked up some ground turkey breast and off I was to make my dinner. They ended up being a little messy….but tasted great! Plus, it’s super simple to make.


Turkey Fiesta Lettuce Wraps
Wraps:
1 tbsp EVOO
1lb ground turkey
1/2 can diced tomatoes
salt & pepper to taste
a few dashes cayenne pepper (optional)
1/2 a head of a sturdy, large leaf lettuce (like iceberg)
Toppings:
salsa (my absolute favorite is tomatillo)
reduced-fat shredded cheese

Place EVOO In a large non-stick pan, on medium. Add turkey and spices. When turkey is fully cooked, add tomatoes then cook until moisture has evaporated. While turkey is cooking, get your toppings ready and your lettuce ready to go. That’s it! Just dig in and enjoy. Makes 4 servings.
